Saucy Skillet Potatoes Recipe
Ingredients
| Margarine | 1 Tablespoon | |
| Onion | 1 Cup (16 tbs), chopped | |
| 1/2 cup Real or Light Mayonnaise or Low FatCholesterol Free Mayonnaise | ||
| Cider vinegar | 1/3 Cup (16 tbs) (Dressing) | |
| Sugar | 1 Tablespoon (Dressing) | |
| Salt | 1 Teaspoon (Dressing) | |
| Ground pepper | 1/4 Teaspoon (Dressing) | |
| 4 medium potatoes, cooked, peeled and sliced | ||
| Parsley | 1 Tablespoon, chopped (Dressing) | |
| 1 tablespoon crumbled cooked bacon or real bacon bits | ||
Directions
In large skillet, melt margarine over medium heat.
Add onion; cook 2 to 3 minutes or until tender-crisp.
Stir in mayonnaise, vinegar, sugar, salt and pepper.
Add potatoes; cook, stirring constantly, 2 minutes or until hot (do not boil).
Sprinkle with parsley and bacon.
