Sauce Vaucluse Recipe

Ingredients
2 tbsp (30 mL) butter
2 tbsp (30 mL) flour
1 1/2 cups (375 mL) cream
Salt and pepper to taste
2 egg yolks, beaten
1 recipe of Hollandaise Sauce
Directions
Melt the butter 1 minute at HIGH.
Add the flour and mix well.
Add the cream and stir.
Microwave 3 to 4 minutes at HIGH, stirring a few times, until sauce is creamy.
Add the beaten egg yolks, stirring constantly, then add the Hollandaise while stirring, until sauce is smooth and creamy.
To reheat, place the sauce in the oven and micro wave 1 minute at HIGH, stir well and, if necessary, microwave 30 seconds more at MEDIUM-HIGH.
Stir and serve.
