Sauce Chasseur Recipe

Ingredients
| Mushrooms | 1/2 Pound, sliced | |
| Butter | 1 Tablespoon | |
| Olive oil | 1 Tablespoon | |
| Shallots | 1 Tablespoon, chopped | |
| 1 large clove garlic, chopped | ||
| 1 glass Marsala or port wine | ||
| White wine | 2 Cup (16 tbs) | |
| 2 cups Brown or Espag-nole Sauce | ||
| 1 cup beef consomme | ||
| Tomatoes | 1/2 Cup (16 tbs), chopped | |
| Bay Leaf | 1 | |
| Parsley | 1 Tablespoon, chopped | |
Directions
Saute mushrooms in butter and oil in large saucepan.
Add shallots and garlic and continue cooking until mushrooms are lightly browned.
Add wines and continue cooking to reduce.
Add Brown Sauce, consomme, tomatoes, bay leaf, and salt and pepper to taste.
Cook 20 to 25 minutes.
When ready to serve sauce, blend in the chopped parsley.
Add shallots and garlic and continue cooking until mushrooms are lightly browned.
Add wines and continue cooking to reduce.
Add Brown Sauce, consomme, tomatoes, bay leaf, and salt and pepper to taste.
Cook 20 to 25 minutes.
