  Egg yolks - 3, hard-cooked
 Salt1/2 Teaspoon
 Pepper1/8 Teaspoon
 Powdered mustard - 1/2 teaspoon
 Olive oil1 Cup (16 tbs)
 Vinegar2 Tablespoon
 Shallot1
 Few parsley sprigs, chopped
 Chervil1 Tablespoon, minced
 Gherkins1 Tablespoon
 Capers1 Tablespoon

Directions

MAKING
1.Strain egg yolks through a sieve.
2.Mix the yolks with salt, mustard and pepper.
3.Add oil drop by drop and continue mixing.
4.Put mustard, shallot, vinegar, parsley sprigs, chervil, gherkins and capers and mix well.

SERVING
5.Serve with meats.
