Sauce Remoulade Recipe
Ingredients
| Egg yolks - 3, hard-cooked | ||
| Salt | 1/2 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Powdered mustard - 1/2 teaspoon | ||
| Olive oil | 1 Cup (16 tbs) | |
| Vinegar | 2 Tablespoon | |
| Shallot | 1 | |
| Few parsley sprigs, chopped | ||
| Chervil | 1 Tablespoon, minced | |
| Gherkins | 1 Tablespoon | |
| Capers | 1 Tablespoon | |
Directions
MAKING
1.Strain egg yolks through a sieve.
2.Mix the yolks with salt, mustard and pepper.
3.Add oil drop by drop and continue mixing.
4.Put mustard, shallot, vinegar, parsley sprigs, chervil, gherkins and capers and mix well.
SERVING
5.Serve with meats.
