Ingredients

 Shallot1 Teaspoon, chopped
 Tomatoes - 2 , peeled, seeded, and chopped
 Marsala3/4 Cup (16 tbs)
 Tomato Paste1 Tablespoon (Sauce Espagnole - 1/2 cup)
 Mushrooms1/4 Cup (16 tbs), chopped (Sauce Espagnole - 1/2 cup)
 Cooked ham2 Tablespoon, finley diced (Sauce Espagnole - 1/2 cup)
 Glace-de-viande or meat extract - 1/2 teaspoon
 Parsley sprigs - few, chopped

Directions

MAKING
1.In a saucepan, cook shallots, wine and tomatoes until tomatoes are tender and the mixture reduces to half of the original.
2.Put sauce Espagnole, mushroom, ham and tomato paste in it and let the mixture boil.
3.Cook the ingredients for 5 minutes.
4.Put glace- de- viande and parsley.

SERVING
5.Use the sauce as desired.
