Directions
Heat the oil in a pot and cook the celery, carrot and onion slowly for 15 minutes.
Add the tomato, tomato juice, salt and pepper and cook for 15 minutes.
Add brandy and chicken stock.
Simmer uncovered for about one hour.
Reserve for chicken.
