Sauce Cardinal Recipe
Ingredients
| Fish roe 15 gm. | ||
| Butter | 20 Gram | |
| Refined flour | 20 Gram | |
| Fish stock | 300 Milliliter | |
| Cayenne a pinch | ||
| Salt | To Taste | |
| Lime juice to taste | ||
| Cream | 75 Milliliter | |
Directions
1. Wash roe. Pound with butter and pass through a hair sieve.
2. Make sauce with this butter, flour and stock.
3. Boil well and add lemon juice, cayenne and salt to taste.
