1 pound lean ground beef
1/2 cup chopped onion
1 cup dairy sour cream
1 can (10 3/4-ounces) condensed cream of mushroom soup, undiluted
1 can (16-ounces) whole kernel corn, drained
1 jar (2-ounces) choppedpimiento
1 teaspoon salt
1/8 teaspoon pepper
1 large tomato, thinly sliced
Directions
Crumble ground beef into 2-quart casserole.
Add onion.
MICROWAVE 5 MINUTES on HIGH until beef is set and onion is transparent.
Add sour cream, soup, corn, pimiento, salt and pepper.
Cover with wax paper.
MICROWAVE 5 MINUTES on HIGH.
Top with tomato slices.
MICROWAVE 3 MINUTES on HIGH, or until tomatoes are slightly softened.
Garnish with canned French fried onion rings, if desired.
Let stand 3 minutes, uncovered.
