Satay-Style Beef And Pasta Recipe

The satay style beef and pasta is a steak preparation made with a tereyaki sauce combined with peanut butter, ginger and red pepper. The steak tossed with cooked vermicelli pasta and sauce is served along with cucmbers for an exotic beef steak recipe- satay style!

Ingredients

 
1 lb. boneless beef top sirloin or top round steak, cut 1 inch thick or flank steak
 
2 tbs. prepared teriyaki sauce
 
6 ozs. uncooked vermicelli or thin spaghetti vegetable cooking spray
 
1/2 cup seeded and chopped cucumber
 
Peanut Butter Sauce:
 
3 tbs. prepared teriyaki sauce
 
2 tbs. creamy peanut butter
 
1 tbs. water
 
1/8 - 1/4 tsp. ground ginger
 
1/8 - 1/4 tsp. crushed red pepper

Directions

Trim fat from beef steak.
Cut steak lengthwise in half and then crosswise into 1/8 inch thick strips.
Add 2 tbs.teriyaki sauce to beef; toss to coat.
Cook vermicelli according to package directions.
Meanwhile in medium bowl, combine sauce ingredients, mixing until well blended.
Add hot vermicelli; toss to coat.
Keep warm.
Spray large nonstick skillet with cooking spray.
Heat over medium high heat until hot.
Add beef (1/2 at a time) and stir fry 1- 2 minutes or until outside surface is no longer pink. (Do not overcook.)
Add to vermicelli mixture; toss lightly.
Sprinkle with cucumber; serve
