3 cups shelled ambar or baby shrimps
3 cups onions, finely chopped
1 cup raw mangoes, finely chopped
4 teaspoons green chillies, finely chopped
1/2 cup fresh coriander, finely chopped
1/2 teaspoon black peppercorns
2 tablespoons cumin seeds
1 teaspoon mustard seeds

1 tablespoon Parsi dhansakh masala
1/2 tablespoon turmeric powder
1/2 teaspoon fennel seeds
1 tablespoon fresh mint, finely chopped, salt, mustard oil
Directions
1. Place one cup of mustard oil on a large tava. Allow to heat and add the onions. Stir with a spatula till cooked and golden brown. Add the ground masala and fry till red. Once the masala is fried, add the salted ambar and lower the flame and cook till soft. Stir frequently.
2. When the ambar is soft add the raw chopped mangoes, green chillies and the coriander. Keep the tava on a very slow fire. Keep stirring till the mango pieces soften and are well blended with the ambar and onions. Taste for salt. Serve sprinkled with fresh mint and eat it with hot khichri or rotlis.
