Sardines with Tomatoes and Red Onion Recipe
Ingredients
| 500 g fresh plum tomatoes, sliced | ||
| Red onion | 1/2 , finely sliced | |
| 2 tins of sardines, drained and rinsed | ||
| Dried oregano | 3 Pinch | |
| Pinch of dried red chilli flakes | ||
| black pepper | 1 | |
| Balsamic vinegar, to taste | ||
| Marjoram leaves | 4 | |
| Black olives | 1 Cup (16 tbs) | |
Directions
Arrange the tomato slices on a serving plate so that they overlap.
Scatter with red onion slices.
Arrange the sardines carefully over the tomatoes.
Sprinkle the sardines with oregano, chilli flakes and freshly ground black pepper.
Drizzle a little balsamic vinegar over the plate.
Garnish with some fresh marjoram leaves and black olives.
Serve at room temperature.
