 Mayonnaise1/3 Cup (16 tbs)
 Prepared mustard1 1/2 Teaspoon
 4 thin slices whole-wheat bread
 Beets 8 1/4 Ounce, drained
 Cucumber1 Small, thinly sliced
 Sardines1 3 3/4 Ounce, drained
 2 hard-cooked eggs, peeled and diced

Directions

1. Mix mayonnaise and mustard.
2. For each serving, on dinner plate, arrange 2 slices bread side by side; spread with some mayonnaise mixture. On mixture, arrange beet and cucumber slices. Top with sardines and eggs, then remaining mayonnaise mixture.
