Sardine Dumpling Soup Recipe
|For seasoning of sardines|
|Ginger juice||1 Teaspoon, squeeze from freshly-grated ginger|
|All purpose flour||1 1⁄2 Tablespoon|
|Dashi broth/Fish stock||5 Cup (80 tbs)|
|Soy sauce||1 Teaspoon|
|Green onion/Watercress||1 , chopped fine (For Garnish)|

1) Dice the fillets into small pieces on a cutting board.
2) Grind the pieces into a paste in a food processor, season well, shape fillet mixture into small dumplings.
3) Add the dumplings to heated dashi broth, on boiling add all the remaining ingredients and boil further for 3-4 min until the dumplings float and change colour; remove any scum from the surface.
4) Garnish with chopped green onion and serve in individual bowls.
