Saraswat Colocasia Stem Raita Recipe

Ingredients
| 25 Colocasia stalks, fine skin removed as far as possible and cut into small pieces. Wash and keep aside. | ||
| 1 large cup thick heavy curd | ||
| Green chillies | 4 , deseeded | |
| Coconut | 1 Large, grated | |
| Garlic | 4 Clove (5gm) | |
| Onion | 1 Small, finely chopped | |
| Sugar | 1 Tablespoon | |
| Mustard seeds | 1/2 Teaspoon | |
| Curry leaves | 1 | |
| Salt | To Taste | |
| Ghee | ||
Directions
Place the colocasia stems in 2 cups of water and allow to cook till soft. Drain and discard the water.
Place the colocasia stem pieces in a large bowl. Add the ground masala to it and mix well.
Whisk the sugar well and add to the stems in the bowl. Also add the finely chopped onion and salt.
Heat 1 tablespoon ghee, add the curry leaves and mustard seeds and allow to crackle. Then add this to the curd mixture and taste for salt.
This makes a very unusual raita.
