1 1/3 cups (320 ml) Italian salad dressing
1 cup (240 ml) Whole Buckwheat Groats
1 cup (240 ml) plum tomatoes, diced
6-oz jar (180 g) marinated artichoke hearts, drained and coarsely chopped or marinated mushrooms, sliced
1 cup (240 ml) pitted kalamata olives or oil-cured black olives
1/3 cup (80 ml) green onion, sliced
1/3 cup (80 ml) red or orange sweet pepper, diced
1/3 cup (80 ml) fresh basil, chopped
1/3 cup (80 ml) flat-leaf parsley, minced
1 cup (240 ml) feta, diced spinach or radicchio leaves
Directions
In 2-qt saucepan, boil water and 1 cup salad dressing.
Stir in buckwheat, reduce heat, cover pan, and simmer 15 minutes or until liquid is absorbed.
Toss cooled buckwheat groats with remaining 1/3 cup salad dressing, tomatoes, artichoke hearts, olives, onions, pepper, herbs and feta.
