The people of Santa Maria are proud of their barbecue specialty; the grilled beef tri-tip steak, the perfect black-on-the-outside and pink-on-the-inside, grilled piece of meat. It’s incredibly flavorful, extremely juicy piece of beef that is guaranteed to satisfy even the most dedicated carnivore. Chef John’s version isn’t exactly authentic, as the meat is not grilled over Central Californian red oak like it should be but it produces a perfectly barbecued piece of beef that is spicy, charred crust outside,
