Ingredients

 
Salad:
 
4 chicken breast
 
2 tbsp. (low sodium) taco seasoning
 
1 head chopped romaine lettuce
 
2c grape tomatoes (cut in half)
 
2c red onion (sliced)
 
2c avocado (diced)
 
1c corn (drained & rinsed)
 
1c black beans (drained & rinsed)
 
1c cilantro
 
1c (fat free) cheddar cheese
 
Dressing:
 
2c Fresh natural salsa
 
1c (fat free) sour cream

Directions

Spray baking dish with olive oil. Place chicken breast in pan and sprinkle with taco seasoning.

Bake 400*F for 20-25 minutes. (till internal temperature of chicken is 165*F)

Remove chicken from baking dish let cool and chop.

Mix: all remaining dry ingredients in large bowl.

Combine salsa and sour cream to make the dressing. Pour over salad. Mix well.
