Santa Fe Pasta Prima Vera Recipe
Ingredients
| Tomatoes | 8 (Sauce:) | |
| Green chilies | 1/2 Cup (16 tbs) (Sauce:) | |
| Garlic | 1/2 Clove (5gm), cleaned (Sauce:) | |
| Jalapenos | 2 (Sauce:) | |
| Cumin | 1 Teaspoon (Sauce:) | |
| Cooked spaghetti | 24 Ounce (Sauce:) | |
| Assorted vegetables | 16 Ounce (Sauce:) | |
| Salt | To Taste | |
| Pepper | To Taste |
Directions
Core tomatoes and place with whole garlic cloves and jalapenos on greased pan and roast until tomatoes have cracked and soft to the touch in 350° oven.
Remove from oven and remove stems and seeds from jalapenos, then place all items in blender and puree.
To Serve: Saute vegetables with a small amount of olive oil and fresh garlic.
Deglaze with white wine and add the sauce and toss with hot pasta.
