Samosas Recipe

Ingredients
50 g (2 oz) (4 tablespoons) butter
200 g (7 oz) (2 cups) self-raising flour
1 egg
45 ml (3 tablespoons) water
225 g (1/2 lb) (2 cups) boiled potatoes, mashed
100 g (1/ 4 lb) (1 cup) cooked peas
50 g (2 oz) (1/2 cup) chopped onions
15 g (2 tablespoons) ginger
5 g (1 tablespoon) cumin
5 ml (1 teaspoon) cloves
10 g (1 tablespoon) chopped
coriander or parsley
salt and pepper
pinch cayenne pepper
Directions
1 Rub the butter into the flour and add the egg and water to make a very firm dough.
Roll out very thin and cut into squares 6.5 cm (2 1/2 in).
2 Mix the potatoes with the peas, onions, spices and herbs.
3 Put 2 teaspoons of the mixture into the centre of each square and fold over into a triangle pressing the edges together to seal.
4 Fry in deep fat for 3 minutes until golden-brown.
