Directions

Heat oven to 375 degrees.
Grease cookie sheets.
Beat shortening, sugar and egg together until fluffy.
Sift flour, baking powder, soda and 1/2 tsp salt together into mixture.
Add water and vanilla.
Stir in rolled oats and blend very well.
Roll thin (about 1/8 inch) on lightly floured board and cut with 2-inch cookie cutter.
Put on cookie sheets and sprinkle very lightly with salt.
Bake 10 to 12 minutes or until lightly browned.
Good as they are and delicious with spreading cheese
Note: Same cookies can be sprinkled with sugar and put together in pairs with date filling at serving time.
