Salt Codfish A La Abad Recipe
The salt codfish a la abad is a gourmet codfish recipe prepared with salt cod. Coated with egg and flour, the cod is fried and baked with alternating layers of sliced and fried potatoes topped with a sauce of vinegar, oil, onions and parsley seasoned with salt and pepper. garnished with lemon, it can be served with a side of choice.
Ingredients
| 8 or 10 serving pieces of boneless | ||
| Salt codfish | ||
| Beaten egg | ||
| Flour (for rolling) | ||
| Oil or lard for frying | ||
| 5 or 6 medium potatoes | ||
| 1/3 cup oil or margarine | ||
| Flour | 3 Tablespoon | |
| Vinegar | 1/2 Cup (16 tbs) | |
| Onion | 1 Small | |
| Parsley | ||
| Boiling water | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Soak fish for about four days, changing the water two or three times.
Drain and dry well.
Roll in egg, then flour and fry in oil or lard.
Also fry sliced potatoes and place in alternate layers with the fish in a baking dish.
Make a sauce with oil or margarine, flour, vinegar, salt and pepper, onion and parsley.
Thin to right consistency with boiling water.
(If preferred, more vinegar and less water may be used.) Pour sauce to almost cover fish and potatoes in casserole and bake at 350 F.
for 1 hour.
Garnish with sliced lemon and serve.
Any extra sauce may be used when serving
