Ingredients

 1 pound salt codfish
 Onion1/2 Cup (16 tbs), diced
 Celery1/2 Cup (16 tbs), diced
 Green pepper1 Small, diced
 Butter/Margarine1/4 Cup (16 tbs)
 Water2 1/2 Cup (16 tbs)
 Tomatoes2 Cup (16 tbs)
 Tomato juice1 1/2 Cup (16 tbs)
 Tomato soup1 Can (10oz), condensed
 1/4, cup tomato ketchup
 Tomato Paste2 Tablespoon
 1 bay leaf, 2 whole cloves, 3 parsley sprigs, 2 garlic cloves, quartered, 1/2 teaspoon crumbled dried tarragon, and 1/4 teaspoon crumbled dried thyme
 Paprika1/4 Teaspoon (Spice bag:)
 Hot pepper sauce1/2 Teaspoon (Spice bag:)
 Worcestershire1/2 Tablespoon (Spice bag:)
 1 cup cooked white rice

Directions

Soak cod overnight.
Bring to a boil with fresh water 4 times, washing cod several times as water is being changed between boilings.
Saute onion, celery, and green pepper in butter for about 5 minutes.
Add next 6 ingredients with spice bag and boil vigorously for 20 minutes.
Add paprika, hot pepper sauce, Worcestershire, and cod which has been flaked.
Cover and simmer for 15 minutes.
Remove spice bag and, just before serving, add cooked rice.
Serve garnished with salted whipped cream and a sprinkling of chopped parsley, if desired.
Makes 8 servings.
