2 lbs. Boneless Skinless Chicken Breasts, cut into 1-inch cubes
 
2 tsp. Canola Oil
 
1 C. Chunky Salsa
 
1/3 C. Orange Marmalade
 
2 T. Lime or Lemon Juice
 
1 T. Brown Sugar
 
1/4 tsp. Ground Allspice

Directions

1. Heat oil in a pan.
2. Cut and cook chicken in a pan.
3. In a bowl, stir together the rest of the ingredients. Mix all together.
4. Once the chicken is done, drain excess liquid from cooking.
5. Then, pour in the salsa mixture over the chicken. Stir it until the chicken is coated.
6. Bring it to a boil for 5 minutes and then reduce heat and simmer, uncovered for 20 minutes.
7. Stirring occasionally.
8. Serve with brown rice.
