Salsa Carnaval Recipe

| Ripe plum tomatoes - 4, seeded and cut into 1/4-inch dice | ||
| Red onion | 1/3 Cup (16 tbs), finely chopped | |
| Jalapeno pepper - 1 teaspoon, seeded, minced | ||
| Lime juice | 2 Tablespoon | |
| Flat-leaf parsley - 2 tablespoons, coarsely chopped | ||

1. In a bowl, put together all the ingredients and mix well.
2. Let it rest for at least 1 hour.
