Salmon With Arugula, Tomato And Caper Sauce Recipe
This recipe for salmon definitely qualifies as an exotic one. Cooked with plum tomatoes and italian parsley, along with shallots, the salmon is broiled and served with the tomato sauce. This salmon recipe is so simple yet flavorful, I cant resist serving this for every ocassion I fancy!
Ingredients
| 1 lb plum tomatoes, seeded and chopped | ||
| 3/4 cup lightly packed chopped fresh arugula, basil or Italian parsley | ||
| Olive oil | 1/2 Cup (16 tbs) | |
| Shallot | 1 , chopped | |
| Lemon juice | 1 1/2 Tablespoon | |
| Capers | 1 Tablespoon, drained | |
| Salmon fillets | 6 Ounce | |
| Olive oil | ||
| Lemon wedges | ||
Directions
Combine first 6 ingredients in medium bowl; season with salt and pepper.
Preheat broiler.
Brush both sides of salmon with oil.
Season with salt and pepper.
Broil, without turning, until just cooked through, about 4 minutes.
Transfer salmon to plates.
Spoon tomato mixture over.
Garnish with lemon wedges.
