Directions

Melt 1-2 tablespoons of the butter in a bowl in the micro wave oven for 1 minute on HIGH.
Stir the flour in well.
Add the milk and microwave for 2 minutes on HIGH, stirring mid-way through the cooking time.
Stir in the sour cream (creme fraiche).
Rinse the salmon steaks under cold running water and pat dry on kitchen paper.
Season with pepper on both sides.
Using 1/2-1 tablespoon of butter, grease the base of a round dish.
Arrange the fish on the dish, skin side outward.
Cover and microwave on HIGH for 4 minutes.
Puree the remaining butter and the anchovy fillets in a food processor.
Mix together the egg yolks and lemon juice.
Remove the skin from the salmon steaks and arrange them on a serving dish.
Spread with the anchovy butter.
Pour the cooking liquid from the salmon into the sauce.
Add the egg yolk and lemon juice mixture and stir well.
Heat in the microwave oven for 1 minute on MEDIUM-HIGH.
Taste and adjust seasoning.
Pour the sauce over the salmon and garnish each steak with a small teaspoon of salmon caviar.
