Spiced Salmon Souffle Recipe
Salmon souffle is a baked souffle prepared with red or pink salmon along with eggs and milk. Flavored with a hint of lemon juice, the salmon souffle is herbed with chives and seasoned with salt and pepper. Served with hollandaise sauce, this salmon souffle is absolutely delicious!
Ingredients
| 1 can salmon, red or pink | ||
| Butter | 2 Tablespoon | |
| Flour | 1 Tablespoon | |
| Milk | 1 Cup (16 tbs) | |
| Salt | 1/2 Teaspoon | |
| Ground black pepper | 1 Dash | |
| Chives | 1 Teaspoon, chopped | |
| Eggs | 3 , separated | |
| Lemon juice | 2 Teaspoon | |
Directions
Remove dark skin and all bones from drained salmon.
Mash with fork. (You should have about 1 cup.)
Melt butter on top of stove.
Add flour; blend.
Gradually add milk; stir until sauce is slightly thickened.
Add salmon, salt, pepper, and chives; remove from heat.
Beat egg whites stiff.
Add beaten egg yolks and lemon juice to salmon mixture.
Fold in egg whites.
Bake in greased mold at 350°F 45 minutes.
Salmon is done when knife comes out of center clean.
Delicious with a Hol landaise Sauce
