Salmon Ring Mold Recipe

Ingredients
2 cups cooked or canned salmon
2 eggs, well beaten
1 cup milk
Salt and pepper to taste
1 teaspoon chopped parsley
1 cup cracker crumbs
Directions
Remove dark skin and bones from the salmon and flake into bite-size pieces.
In a mixing bowl add to the salmon the rest of ingredients in order given.
Mix well.
Grease a 3 cup ring mold.
(Check to make sure the mold will set on the rack in your pressure cooker.) Pack the salmon mixture into the mold and cover with silver foil.
Put 2 cups water in the cooker and set rack in place.
Put covered mold on the rack.
Close cover and put pressure control in place.
When pressure is reached, cook for 10 minutes.
Cool cooker at once.
Unmold salmon ring onto serving platter.
