3 cups cooked rice
 
1 (15 1/2-ounce) can salmon, drained
 
1 (10-ounce) package frozen English peas thawed
 
2 carrots, diced
 
2 green onions, chopped
 
1/4 cup chopped fresh parsley
 
1/2 cup Italian salad dressing Green pepper rings Lettuce leaves (optional) Tomato quarters (optional

Directions

Combine first 7 ingredients in a large bowl.
Cover and refrigerate overnight.
Garnish with green pepper rings.
Serve on lettuce leaves, and garnish with tomato quarters, if desired.
