Salmon Patties With Fresh Dill Recipe
These salmon patties are filling and flavorful and can be served with hamburger buns. Cooked with mashed potatoes and sockeye salmon, the salmon patties are flavored with dill and prepared along with eggs. With added worcestershire sauce and mustard for taste, teh salmon patties with dill can be served as a full meal with a side of fresh salad.
Ingredients
1 61/2-oz/184 g tin sockeye salmon 1
1 cup mashed potatoes, or fresh whole wheat or white breadcrumbs 250 ml
2 egg whites, or 1 whole egg 2
2 tbsp low-fat yogurt 25 mL
1 tbsp Dijon mustard 15 mL
1 tsp Worcestershire sauce 5 mL
2 tbsp chopped green onions 25 mL
2 tbsp chopped fresh dill or parsley 25 mL
1/4 tsp pepper 1 mL
Directions
Drain salmon and remove skin.
Leave in bones (for added calcium) or remove.
In bowl, mash salmon with potatoes.
Beat in egg whites, yogurt, mustard, Worcestershire, green onions, dill and pepper.
Shape mixture into 8 small patties or 4 large ones, about 1/2 inch/1 cm thick.
Place salmon on parchment paper-lined baking sheet and bake in preheated 375°F/190°C oven for 15 to 20 minutes, turning once, until brown and crusty. Or, cook in a non-stick pan brushed with 1 tbsp/15 mL unflavoured oil for about 5 minutes per side.
