Ingredients

 
1 tablespoon unflavored gelatin
 
2 tablespoons cold water
 
1/2 tablespoon flour
 
11/2 tablespoons sugar
 
1 teaspoon dry mustard
 
1 teaspoon salt
 
Few grains cayenne
 
2 eggs
 
1/4 cup milk
 
1/4 cup vinegar
 
11/2 tablespoons melted butter
 
11/2 cups flaked salmon
 
1/2 cup heavy cream, whipped

Directions

Soften gelatin in cold water.
Mix flour, sugar and seasonings in top part of double boiler.
Add eggs and stir until smooth.
Add milk, then vinegar slowly and mix well.
Cook over hot water until mixture thickens, stirring constantly.
Stir in butter and softened gelatin.
Stir until gelatin is dissolved.
Stir in flaked salmon.
Chill, stirring occasionally.
When slightly thickened fold in whipped cream and turn into a mold.
Chill until firm.
Unmold on crisp lettuce and serve with Cucumber Dressing.
Makes 6 servings.
