Salmon Mediterranean Stir-Fry Recipe

Salmon is a beautiful colored, delicious fish, popular all over the world. The flavor of salmon can be infused with all five flavor groups, this is a fish with unlimited seasoning opportunities. TIP: prep time is 10 minutes if you have to cut the ingredients. Ask you the person at the fish counter to cut your salmon in bite size pieces. Saves you time when you have to cook a quick meal.

Recipe Story

I just love the flavor combinations of every part of the Mediterranean, so just enjoy!

Ingredients

 
Shopping/to do list :
 
8-12 oz. Salmon, cut into bite size
 
1 Onion, sliced thin
 
1 T garlic
 
1 T capers
 
2 Cups Escarole
 
2 T cream or H&H
 
2 T pine nuts
 
1/3 Cup white wine (optional)
 
1 T dill
 
Salt & Pepper to taste
 
Serve over linguine and garnish with dill

Directions

1 - Cut ingredients into desired sizes.

2 - Add a little oil or cooking spray of your choice to the pan. Heat pan to 375° F/ medium high heat.

3 - Add salmon. Stir around for 2 minutes.

4 - Add onion, capers, and garlic. Stir around for 2 minutes.

5 - Add escarole, sea salt and pepper to taste. Finish with cream, wine, pine nuts and dill. Stir around for an additional minute. Serve over linguine and garnish with dill.
