Salmon Loaf Recipe

Ingredients
1 (16 ounce) can salmon
1/2 cup milk
3 cups soft bread crumbs
1/4 cup butter or margarine, melted
1/3 cup salmon liquid
3 egg yolks, beaten
2 tablespoons finely chopped green pepper
2 tablespoons finely chopped onion
1 tablespoon lemon juice
1/8 teaspoon pepper
3 egg whites, stiffly beaten
Directions
Drain salmon; save liquid.
Flake salmon.
Heat milk.
Add bread crumbs and butter; let stand 5 minutes.
Add salmon liquid; beat until smooth.
Add egg yolks, green pepper, onion, lemon juice, pepper, and salmon; mix well.
Fold in egg whites.
Pour into well-greased 1 1/2 quart loaf pan.
Bake at 350°F 40 to 50 minutes, until firm in center.
Remove from oven; let stand 5 minutes.
Loosen from sides of pan with spatula invert onto serving platter.
