Salmon Au Gratin Recipe

| Salmon | 1 Pound, can | |
| Celery | 1 Cup (16 tbs), chopped | |
| Onion | 1 Small, grated | |
| Butter | 1⁄3 Cup (5.33 tbs) | |
| Flour | 1⁄3 Cup (5.33 tbs) | |
| Salt | 1 Teaspoon | |
| Pepper | 1⁄4 Teaspoon | |
| Milk | 3 Cup (48 tbs), scalded | |
| Cooked rice | 2 Cup (32 tbs) | |
| Mushrooms | 1 Ounce, drained | |
| American cheese | 1⁄2 Pound, grated | |
| Parsley | 1⁄4 Cup (4 tbs), minced |

Directions
Combine celery and onion in butter in saucepan; saute for 5 minutes.
Blend in flour, salt and pepper; add milk gradually.
Cook, stirring constantly, until thickened and smooth.
Stir in salmon, rice, mushrooms and cheese; turn into casserole.
Bake at 350 degrees for 20 minutes or until bubbly and heated through.
Garnish with parsley.
