Ingredients
Unflavored gelatin - 1 env.
Lemon juice - 1/4 c.
Salad dressing - 2 c.
Salmon – 1-1-lb. can
Minced onion - 3 tbsp.
Hard-cooked eggs - 2, chopped
Chopped stuffed olives - 1/3 c.
Russian dressing
Directions
GETTING READY
1) Grease a 1 1/2- quart mold with oil.
MAKING
2) Add gelatin into 1/4 cup cold water and soften.
3) Add over hot water and dissolve.
4) Add in the lemon juice and salad dressing.
5) Stir till the mix forms a smooth sauce, then remove from the heat.
6) Drain and flake the salmon.
7) Combine onion, salmon, eggs and olives with the gelatin mix.
8) Pour into the mold and refrigerate till firm.
SERVING
9) Garnish with lettuce and cherry tomatoes.
10) Serve with Russian dressing.
