Salmon Surprise Loaf Recipe
Ingredients
| Salmon | 2 Cup (16 tbs), canned | |
| 1/2 cup soft fresh bread crumbs | ||
| Onion | 2 Tablespoon, grated | |
| Parsley | 1 Tablespoon, minced | |
| Salt | 1/2 Teaspoon | |
| Celery salt | 1/2 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Butter/Margarine | 3 Tablespoon, melted | |
| Egg | 1 , Well beaten | |
| 1 hard-cooked egg, sliced | ||
| 6 stuffed olives, shced | ||
Directions
1. Start oven, set at Moderate, 350° F. Rub a loaf pan or dish with margarine or butter.
2. Drain and flake the salmon; discard bones and skin. Add crumbs, onion, parsley, salt and celery salt, pepper, 2 tablespoons butter or margarine and 1 egg.
3. Pack half of this mixture into the loaf pan. Arrange the sliced egg and olives on top, then add the rest of the salmon mixture. Pour the remaining tablespoon of melted butter or margarine over the top.
4. Bake about 30 minutes. This loaf may be served hot or cold. It is good with Mustard Sauce, or Tomato Sauce if hot; if cold with mayonnaise or Tartare Sauce
