Ingredients

 Salmon2 1/2 Pound
 Oil1 Tablespoon
 Carrot1 , grated
 Shallots2 , minced
 Lemon1 , thinly sliced
 2 tablespoons white vermouth
 2 tablespoons cider or apple juice with juice of 1/2 lemon
 Salt To Taste
 Pepper To Taste

Directions

Wipe fish clean with damp cloth.
Rub it with lemon, salt and pepper on both sides.
Oil bottom of clay baker.
Add: carrot, shallots, lemon.
Arrange steaks.
Moisten.
Close and bake.
