Salmon Ring Recipe

Ingredients
1 can (15 1/2 ounces) red salmon
1/2 cup chopped celery
1/2 cup chopped green pepper
2 tablespoons minced onion
1 cup fine dry bread crumbs
1 tablespoon lemon juice
1 cup undiluted evaporated milk
1 egg, beaten
1 package (10 ounces) frozen green peas, cooked
1 cup Medium White Sauce
Directions
1. Drain salmon; discard skin and bones, if desired. Flake salmon and set aside.
2. Combine celery, green pepper and onion in a 2-quart glass casserole. Cook uncovered in microwave oven 2 minutes at High, or until tender.
3. Add flaked salmon, bread crumbs, lemon juice and a mixture of evaporated milk and egg to cooked vegetables; mix well. Carefully spoon salmon mixture into a 5 1/2- to 6-cup microwave-oven-safe ring mold. Cover with waxed paper.
4. Cook in microwave oven 8 to 9 minutes at High; rotate ring mold one-quarter turn once.
5. Unmold salmon ring on a heated platter. Mix peas with white sauce. Spoon into center of ring.
