Salmon Quiche Recipe
Ingredients
| Low fat cottage cheese - 1/2 cup | ||
| Ricotta cheese | 1/2 Cup (16 tbs) | |
| Buttermilk | 1/4 Cup (16 tbs) | |
| Scallions | 2 | |
| Eggs | 2 | |
| Red salmon - 15 1/2 oz, drained, with bones | ||
| Nutmeg - a pinch, freshly grated | ||
| Whole wheat pasty crust - 1X9", unbaked | ||
Directions
MAKING
1. In a blender, process together the cheeses and buttermilk at low speed till well blended; turn out in a large bowl and mix with scallions and eggs
2. Flake the salmon meat, crush the bones and add to the cheese mixture along with a pinch of nutmeg
3. Add the salmon mixture into the pie crust adn place in an oven preheated to 400°F; bake for twenty minutes, turn the temperature down to 350°F and bake another fifteen minutes until golden brown
SERVING
4. Can be served both hot or at room temperature
