Ingredients

 3 medium potatoes, cooked, peeled, and cubed
 1 hard-cooked egg, chopped
 Celery1/2 Cup (16 tbs), sliced
 Shredded carrot1/2 Cup (16 tbs)
 Green onion2 Tablespoon, chopped
 Cottage Dressing
 1 16-ounce can salmon, drained, boned, and broken into chunks
 Green pepper1 To taste

Directions

In large bowl combine potatoes, egg, celery, carrot, and onion.
Add Cottage Dressing to potato mixture, tossing lightly to coat.
Gently fold in salmon.
Cover and chill thoroughly.
Place atop green pepper rings on individual salad plates; garnish with carrot curls and additional green pepper, if desired.
