Salmon Pie Recipe
This Salmon Pie recipe will entice any eater fussy or easy. I have a weakness for Salmon, thus I prepare this recipe often. This Salmon Pie when served as Side Dish is sure to please your family members. This Salmon Pie is surely going to make you popular amongst your friends once you treat them to it.
Ingredients
4 shortcrust pastries
12 oz canned salmon milk
2 tbsp butter
1/2 cup celery, finely chopped
1 small onion, finely chopped
2 tbsp flour
Salt and pepper
1 tbsp parsley, chopped
Pinch of savory
1 tbsp lemon juice
2 small potatoes, diced
1/2 cup green peas
2 hard boiled eggs, chopped
Directions
Preheat oven to 350 °F (175 °C).
Line 2 pie pans with crust.
To salmon juice, add enough milk to make 2/3 cup (160 mL) liquid.
In a saucepan, melt butter.
Over moderate heat, saute celery and onion 10 minutes or so.
Fold in flour, salt and pepper.
While stirring, add milk in a thin stream.
Season with parsley, savory and lemon juice.
Cook until sauce thickens.
Fold in salmon, potatoes, green peas and eggs.
Pour into pie crusts.
Cover with remaining crusts.
Pinch edges to seal.
Make 4 vents in top crust.
Bake in oven 20 minutes or until pies turn a nice golden brown color.
