Salmon Patties On Spinach Recipe

Ingredients
4 slices white bread
1 7 1/2 to 7 3/4-ounce can salmon, drained and flaked
2 eggs
1/4 teaspoon salt
1/8 teaspoon pepper
Dill weed
1 tablespoon salad oil
1/2 cup mayonnaise
1 teaspoon prepared mustard
1 10-ounce package frozen chopped spinach
4 lemon slices for garnish
Directions
1. Into large bowl, tear bread slices into small pieces; add salmon, eggs, salt, pepper, and 1/8 teaspoon dill weed; mix well. Shape salmon mixture into four 1-inch-thick round patties. In 10-inch skillet over medium heat, in hot salad oil, cook patties 10 minutes or until browned on both sides, turning once.
2. Meanwhile, prepare sauce: In 1-quart saucepan over low heat, heat mayonnaise, mustard, and 1/8 teaspoon dill weed until warm (do not overcook sauce or mixture will curdle), stirring constantly.
3. Remove patties from skillet; keep warm. In same skillet, prepare spinach as label directs; drain. Place patties on spinach; garnish with lemon slices.
