2 envelopes Unflavored Gelatine
 
1 can (15 1/2 ounces) salmon, drained (reserve liquid)
 
1 stalk celery, cut into 3-inch pieces
 
1 small onion, quartered
 
1/2 medium cucumber, peeled, seeded and quartered
 
1 cup (1/2 pint) whipping or heavy cream
 
3/4 cup mayonnaise
 
1/4 cup lemon juice
 
1 teaspoon dried dill weed
 
1/2 teaspoon salt (optional)

Directions

In medium saucepan, sprinkle unflavored gelatine over reserved salmon liquid blended with enough water to equal 1 cup; let stand 1 minute.
Stir over low heat until gelatine is completely dissolved, about 5 minutes.
In blender or food processor, process gelatine mixture, vegetables, cream, mayonnaise and lemon juice until blended.
Add salmon, dill and salt; process until blended.
Pour into 6-cup mold or bowl; chill until firm, about 3 hours.
Unmold and serve with assorted crackers.
