Salmon Melt Recipe

Ingredients

 
2 English muffins
 
1 (7-3/4-oz.) can pink salmon
 
Milk
 
1 tablespoon butter or margarine
 
1 tablespoon all-purpose flour
 
1/4 teaspoon dill weed
 
1/8 teaspoon salt
 
1 egg yolk
 
1/4 cup finely chopped celery
 
1 tablespoon finely chopped pimiento-stuffed-olives
 
4 tomato slices
 
1/4 cup freshly grated Parmesan cheese (3/4 oz.)
 
Pimiento-stuffed-olive slices

Directions

Preheat broiler.
Split English muffins; place on a broiling pan.
Toast split muffins in broiler; set aside.
Drain salmon, reserving liquid in a 1-cup measure.
Add milk to liquid to make 1/2 cup.
Flake salmon; set aside.
Melt butter or margarine in a small saucepan.
Stir in flour, dill and salt.
Slowly stir in milk mixture.
Stirring constantly, cook until smooth and slightly thickened.
In a small bowl, beat egg yolk; blend in 1/4 cup sauce.
Stir egg-yolk mixture into remaining sauce; heat through.
Do not boil.
Remove pan from heat; fold in flaked salmon, celery and chopped olives.
Place a tomato slice on each split, toasted muffin half.
Spoon salmon mixture over tomato slices.
Sprinkle with cheese.
Broil sandwiches until tops are lightly browned.
Garnish with olive slices.
