Ingredients

 Salmon steaks- 4
 White wine- 150 ml/1/4 pint/2/3 cup
 Lemon juice1
 Onion1
 Peppercorns6 To taste
 Watercress sprigs- to garnish
 Sprig onions- 1 bunch, shredded
 Butter- 25 g/1 oz/2 tablespoons
 Cucumber- 1/2, peeled, cut into coarse matchsticks, blanched and drained
 Tomatoes- 225 g/8 oz/-1/2 lb, skinned and quartered
 Chopped parsley
 Salt To Taste
 Pepper To Taste

Directions

GETTING READY
1. Start by preheating the oven to 350° F

MAKING
2. In a dish, poach the steaks in the wine with lemon juice, onion and add peppercorns to it, take the dish and cover it and bake at 350° F for about 15 minutes, or by the thickness of the fish
3. Take the slamon and carefully remove the skin
4. Meanwhile, prepare the sauce, take a pan, and in it, by saute the spring onions in melted butter, also add the cucumber sticks, saute quickly
5. In a pan, stir in the tomatoes and heat it season by adding a little parsley
6. In a dish, spoon the tomato sauce and place salmon on top of it, also spoon over tarragon-flavoured hollandaise sauce and garnish

SERVING
7. Serve with a sauce of your choice
