Microwave Salmon Loaf Recipe
Ingredients
1 (1 lb.) can salmon
2 lightly beaten eggs
1 cup soft bread crumbs
1/4 cup evaporated milk
1/2 cup finely diced celery
1/4 tsp. salt
2 Tbsp. finely chopped onion
2 tsp. lemon juice
1 (2 oz) jar pimientos, diced

Directions
In medium mixing bowl combine salmon, eggs, bread crumbs, milk, celery, salt, onion, lemon juice and diced pimiento.
Arrange in 6 cup plastic ring dish.
Decorate top with pimiento strips, sprinkle with chives.
Microwave (high) 7-9 minutes, rotating 1/4 turn halfway through cooking.
Rest 5 minutes.
