Ingredients

 
1 can (15 1/2 ounces) red salmon
 
3/4 cup fine saltine cracker crumbs
 
1/3 cup milk
 
2 eggs
 
1/4 cup sliced pimiento-stuffed green olives
 
1/4 cup chopped parsley
 
1 tablespoon chopped onion
 
Hollandaise Sauce

Directions

1. Drain salmon; discard skin and bones, if desired. Flake salmon and put into a bowl. Add cracker crumbs, milk, eggs, olives, parsley and onion; mix thoroughly. Turn mixture into a 1-quart glass casserole; press lightly.
2. Cook uncovered in microwave oven 4 to 5 minutes at High; rotate casserole one-quarter turn once.
3. Remove from oven; let stand 5 minutes.
