Cheese Salmon Loaf Recipe
Over the years I perfected the art of making this Salmon Loaf which was taught to me by my elders. It is served as a delicious Main Dish. The most essential ingredient in Salmon Loaf is always Salmon. You will be tempted to prepare this Salmon Loaf recipe again.
Ingredients
1 1/2 cups bread crumbs
1/2 cup milk
2 eggs, lightly beaten
1 cup cottage cheese
4 shallots with greens, finely chopped
1 can salmon
1/2 lemon, pressed
3 tablespoons fresh parsley, chopped
3 hard boiled eggs
Salt and pepper to taste
Paprika
1 tablespoon vegetable oil
8 thinly sliced rings of sweet red or green peppers
Directions
In a large bowl mix in order: bread soaked in milk and squeezed dry, eggs, cheese, shallots, flaked salmon (discard backbone), parsley, lemon juice, seasoning.
Knead with wet hands to obtain homogeneous mixture.
Oil bottom of clay baker.
Add 1/3 of mixture.
Place peeled, hard boiled eggs (boiled 10 minutes) end to end.
Add remaining mixture to form an oval shaped loaf.
Press with hands.
Sprinkle generously with paprika.
Decorate with ring of red or green sweet peppers.
Close and bake.
Ten minutes before end of baking time, remove dish.
Encircle the loaf with buttered sweet peas.
