Salmon In Rice Nests Recipe
Ingredients
| Rice | 1 Cup (16 tbs) | |
| Egg yolk | 1 | |
| 2 cups Medium White Sauce | ||
| Lemon juice | 2 Tablespoon | |
| Pepper | 1/8 Teaspoon | |
| Cooking sherry | 2 Tablespoon | |
| Salmon | 1 Can (10oz), flaked | |
| Mushrooms | 1/3 Cup (16 tbs), sauteed | |
| 2 hard-cooked eggs, sliced | ||
Directions
Cook rice in boiling salted water until tender and drain.
Beat egg yolk slightly; add white sauce slowly.
Add lemon juice, pepper, sherry, salmon and mushrooms.
Heat thoroughly.
Shape rice into mounds on plates; make depression in center of each to form nests.
Fill with salmon mixture.
Garnish with egg slices.
Serves 8.
