Salmon Flan Recipe

Ingredients

 
Short pastry using 4 oz. flour
 
1/4 c. chopped green peppers
 
8 oz. canned salmon
 
1/2 oz. flour
 
1/4 tsp. salt
 
1/4 pt. canned, sliced mushrooms
 
1 Tbs. chopped red pimento
 
1 oz. butter
 
1 stick chopped celery
 
Sliced red pimento
 
Pinch of garlic salt

Directions

Roll the pastry, line the flan and bake blind.
While it is cooking make the filling.
Drain the salmon and mushrooms, retaining the liquids.
Melt the butter and stew the celery and green pepper in it until they are tender.
Mix in the flour and salt.
Make the mushroom and salmon liquids up to 1/4 pt. with milk.
Add to the pan and stir until it boils, boil for a few minutes.
Add the salmon, mushrooms, chopped red pimento and garlic salt.
Heat thoroughly and pour into the pastry case.
